A quick and easy recipe for a low carb keto blueberry mug cake ready in no time! Light, fluffy, and loaded with blueberries, this easy coconut flour-based muffin in a mug is protein-packed, low carb and 100% sugar-free, vegan, paleo, and gluten-free.

Instructions

  1. Add the butter and cream cheese to a mug and microwave for 20 seconds. Mix with a fork.
  2. Add the baking powder, salt, coconut flour, and stevia and combine it with the fork.
  3. Add the egg and combine.
  4. Add the fresh blueberries, and gently combine.
  5. Microwave for 2 minutes.
  6. Flip over onto a plate or eat right out of the mug. Dust with powdered erythritol, if desired and enjoy!

Sadly, this was too salty to eat. After I made it I realized that 3/4 t. Baking soda and 1/4 t. Salt is way too much for a single serving. I checked some other recipes that used 1/2 t baking soda and no salt.

First time making a cake in a mug. I have a 1000 watts microwave, 2 minutes was not long enough. I don’t have a way to weigh the blueberries so I had to guess at the amount. I added a splash of lemon juice and vanilla And a tbsp of walnuts.
